Dolce

Late Harvest Wine, Napa Valley 2003

89% Semillon & 11% Sauvignon Blanc from grapes affected by the noble rot called Botrytis.  The Dolce vineyard is located at the base of the Vaca Mountains where the volcanic soil is loose and well draining, and the west-facing vineyard is protected from the prevailing winds so that the damp, morning fog which encourages the growth of Botrytis, hangs longer among the vines.  Harvesting is done by hand and consists of picking only those bunches, or individual berries, that have been properly concentrated by the botrytis.

Serve with, Goat and Blue Cheeses, Parmigiano Reggiano, sweet stone fruits, foie gras, duck, pheasant, richly flavored shellfish like scallops, lobster and crab.
