We love fine cheese! If you do as well, we hope you will visit our shop and allow us to taste you through our selection of hand picked small production examples to find those which you will love too. Generally we carry between forty and fifty cheeses at a time. This may seem like a small number compared to the one hundred or more boasted by gourmet supermarkets and the like but I have found that even at the most prestigious of this type of cheese store, that vast an array promotes neglect in many of the cheeses causing them to suffer from stale flavors and dried out textures. To prevent this we choose our selection with an eye towards freshness, so we pick our cheese first on their quality of flavor and texture, but also on their sale-ability. We are continually bringing in new cheeses which we feel are delicious examples of their type, however, inevitably some don’t appeal to enough of our customers so we remove them from sale in order to protect the loyalty of our patrons.
